DadsStory: Lunchtime Goodies

            Breakfast isn’t the only important meal of the day for your children, and getting your kids to eat what you fix is always the task.  The recipes below are sure to be a success with your kids – and they are easy to make!

           So try out these fun and tasty lunchtime recipes for your next lunch time with the kids.  They are sure to love them!

Taco Burgers
Ingredients:
            1 pound ground beef
            1 8-oz. can tomatoes
            1 teaspoon chili powder
            1 teaspoon worcestershire sauce
            1 teaspoon prepared mustard
            ½ teaspoon sugar
            ¼ teaspoon garlic salt
            4 lettuce leaves
            8 hamburger buns
            1 cup shredded cheese
            Taco Sauce
Directions:
            1.)  Brown the beef in a skillet over medium-high heat while stirring.  This will take around 10 minutes.  Once browned, drain off excess fat.
            2.)  Add tomatoes and their liquid, chili powder, Worcestershire sauce, mustard, sugar, and garlic salt to the skillet.  Stir to mix well.
            3.)  Turn the burner up to high and cook until the mixture boils, stirring a few times.  Once boiling, turn heat to low and simmer while stirring a few times until mixture begins to thicken, about 10 minutes.
            4.)  Tear lettuce into bite-size pieces.
            5.)  To serve, put bottom of a bun on a plate and spoon some of the meat ontop.  Top meat with some lettuce, cheese, and the other half of the bun.  Serve with taco sauce if desired.

 

 

Skillet Hamburgers
Ingredients:
            1 pound ground beef
            Salt
            Pepper
            4 hamburger buns
Directions:
            1.)  Measure ½ cup of ground beef per hamburger and shape into a flat, round burger approximately 3 ½ to 4 inches across.  Put the burgers in a skillet.
            2.)  Put skillet over medium-high heat and cook until browned on the bottom, about 7 minutes.  Check to see if they are done, and when done flip hamburgers and sprinkle with salt and pepper.
            3.)  Cook hamburgers until browned on the bottom, about 4 more minutes.  Let cool, and serve.

 

 

Hot Dog Wrap-Ups
Ingredients:
            2 tablespoons butter or margarine, softened
            4 slices bread
            4 slices cheese
            4 hot dogs
Directions:
            1.)  Preheat oven to 375 degrees.
            2.)  Spread the softened butter or margarine on one side of each slice of bread.  Place buttered side down on a baking sheet.
            3.)  Place a slice of cheese on each bread slice, then place a hot dog diagonally across each slice.
            4.)  Fold the two opposite corners of the bread over each hot dog and push two wooden toothpicks through the bread and into the hot dog to keep the corners around it.
            5.)  Place in oven and bake until bottoms are golden brown, about 10 minutes.

 

 

Nachos
Ingredients:
            nacho chips
            shredded cheese
            salsa
Directions:
            1.)  Place the nacho chips on a cookie tray and put a little salsa on each chip.
            2.)  Cover all chips with shredded cheese.
            3.)  Place the cookie tray into a warm oven until cheese melts.
            4.)  Remove from oven and cool before serving.

 

 

Coconut Covered Bananas
Ingredients:
            1 orange
            2 bananas
            1 cup of shredded coconut
Directions:
            1.)  Cut bananas into several chunks.
            2.)  Cut an orange and squeeze the juices into a bowl or saucer.
            3.)  Roll the banana in the orange juice, and then roll the banana in the shredded coconut, covering them well.

 

 

Peanut Butter & Banana Sandwiches
Ingredients:
            4 slices raisin bread
            Peanut butter
            1 banana
Directions:
            1.)  Toast the bread slices and then spread one side of two slices with peanut butter.
            2.)  Peel the banana and cut in half crosswise, and again lengthwise to make 4 pieces.
            3.)  Place two pieces of banana on one slice of the toast and top with a plain slice.
            4.)  Cut sandwich in half and serve.
