DadsStory: Great One-Pot Indoor BBQ

I love to barbecue and my kids love to eat it!  My neighbors have even caught me standing outside in the bitter cold and snow just to barbecue something on the grill.  But sometimes, it’s just plain simpler to make something inside and skip all the mess.  These one pot dishes are great when my kids and I are craving that BBQ flavor.

Barbecued Goulash
Ingredients:
            1 pound lean ground beef or ground turkey
            2 cups wagon wheel pasta, uncooked
            1 can (14 1/2 ounce) stewed tomatoes
            1 1/2 cups water
            1 (10 ounce) package of frozen sweet corn, thawed and drained
            1/2 cup barbecue sauce
            Salt and pepper to taste
Directions:
            1.  In a large skillet, saute the beef or turkey over medium heat for five minutes, or until the meat is well browned.
            2.  Stir in pasta, tomatoes, water, corn, and the barbecue sauce.  Bring the mixture to a boil.
            3.  Reduce heat to low, then cover the skillet and simmer for about 15 to 20 minutes, or until the pasta is tender, stirring occasionally.  
            4.  Let cool and serve.  Season with salt and pepper once cooked. Excellent when served with corn muffins! 

 

 

Barbecued Casserole
Ingredients:
            14 ounce package smoked sausage, sliced
            1 cup thick salsa
            1 cup barbecue sauce
            1 cup corn, canned or frozen
            15 1/2 ounce can kidney beans, drained
            3 pound 5 ounce can of pork and beans, drained
            1 medium onion, chopped
Directions:
            Combine all of the ingredients in a large soup pot and bring the mixture to a boil.  Once boiling, reduce the heat and simmer for about 5 to 10 minutes.  Let cool, and serve.
