DadsStory: Shakes, Slushies, And Smoothies

Submitted by:  Tim Pate

There have been a lot of recipes on here for various foods, but not much along the lines of quick snacks – such as shakes, slushies, and such.  My s11 likes to drink these as snacks or with his meals.  He’s always asking me to make one for him.  I really like these drinks because they are so easy and quick to make.  And I have to admit that I like them myself.  Even when my son is gone, I find myself making them for a quick snack.  Hope you guys like them as well.

Apple Lemon Slushy

¼ cup frozen apple juice concentrate

Pumpkin Smoothie

Ingredients:

            ½ cup canned pumpkin

¾ cup milk or vanilla yogurt

            2 teaspoons brown sugar

            ¼ teaspoon cinnamon

            1/8 teaspoon nutmeg

            4 ice cubes

Place all ingredients in a blender and blend until smooth.

Watermelon Smoothy

Ingredients:

8 cups cubed seeded watermelon (about 6 pounds w/ rind), divided

            ¼ cup fresh lime juice

4 cups club soda or seltzer water, well chilled

Lime slices for garnishing if you like

Directions:

1.) Combine half the watermelon, half the water, and half the sugar in a blender.  Blend the mixture until it is completely smooth forming a puree.

2.)  Pour the mixture through a coarse strainer into a large container.

3.)  Repeat steps 1 and 2 with the remaining watermelon, water and sugar.

4.)  Stir in lime juice.  Refrigerate until the mixture is well chilled (about 4 hours).

5.)  To serve, stir in club soda (or seltzer) and throw in a lime wedge.
