DadsStory: What We Cook Together For Dinner

Dinner is the time when the kids and I can actually get some good quality time together.  When the children have done something special, I reward them with either going out to eat somewhere or by ordering in.  But as I don’t want to spoil them too much with eating out or ordering in, the rest of the time we make our own dinners in the kitchen.  Here are a few of the recipes that my children really love.

Biscuit Pizza
Ingredients:       1 small can pizza sauce
                                Grated mozzarella cheese
                                1 (10 count) can biscuits
Directions:
     1.)  On an ungreased cookie sheet, place biscuits about one inch apart.  Flatten the biscuits, then put on one tablespoon of pizza sauce and sprinkle with cheese.
     2.)  Bake according to directions on the biscuit can.
     3.)  You can add sliced pepperoni, chopped olives, sliced mushrooms, etc… to create your own unique biscuit pizza.

 

Cowboy Casserole
Ingredients:       14 oz package smoked sausage, sliced
                                1 cup thick salsa
                                1 cup BBQ sauce
                                1 cup corn, canned or frozen
                                15 ½ oz can kidney beans, drained
                                3  5oz cans pork and beans, drained
                                1 medium onion, chopped
Directions:
            1.)  Combine all the ingredients into a large soup pot.
            2.)  Bring to a boil, reduce heat and simmer for between 5 to 10 minutes.

 

 

 

Grilled Lemonade Chicken
Ingredients:       6 chicken breast halves
                                1 can (6oz) frozen lemonade concentrate
                                ¼ cup soy sauce
                                1 teaspoon salt
                                ¼ teaspoon garlic powder
                                ¼ teaspoon paprika
                                ¼ freshly ground black pepper
Directions:
            1.)  Combine all ingredients in a large mixing bowl and stir until well mixed.
            2.)  Place chicken in a re-sealable plastic bag, then pour in the lemonade mixture.
            3.)  Let the chicken marinate for about one hour.
            4.)  Preheat grill.
            5.)  Once the grill is heated, remove the chicken from the marinade and place on the grill.
            6.)  Grill for about 6 or 7 minutes per side, until cooked.
            7.)  Let chicken rest for about 5 minutes before serving.

 

 

 

Bacon and Double Cheeseburger Loaf
Ingredients:       4 slices bacon
                                1 ½ pounds lean ground chuck or round
                                1 cup fresh white bread crumbs
                                1 cup shredded sharp Cheddar cheese (about 4 ounces)
                                1 large sweet onion (such as Vidalia), chopped
                                2 tablespoons mayonnaise
                                2 tablespoons sweet pickle relish
                                2 teaspoons dry mustard
                                ¾ teaspoon salt
                                ½ teaspoon freshly ground pepper
                                1 egg
                                ¼ cup ketchup
Directions:
            1.)  Preheat oven to 350 degrees.
            2.)  In medium skillet, cook the bacon over medium heat until limp (about 3 to 4 minutes).   Remove the bacon from the skillet.
            3.)  In a large mixing bowl, gently but thoroughly hand mix the meat, bread crumbs, ½ cup of the cheese, onion, mayonnaise, relish, mustard, salt, pepper, and the egg.
            4.)  Pat the mixture into a shallow 2-quart baking pan and then spread ketchup over the top of the loaf.  Lay the bacon strips over the ketchup.
            5.)  Bake for about 45 to 50 minutes or until the loaf is firm and the bacon is crisp.  Sprinkle the rest of the cheese onto the top of the loaf during the last 5 to 10 minutes of baking.
            6.)  Let cool in the baking dish for about 10 minutes, then remove and serve.

 

 

Cheese Dog Chowder
Ingredients:       2 cans Progresso White Cheddar Potato Soup
                                1 cup milk
                                1 cup frozen corn, thawed
                                4 hot dogs, thinly sliced
                                1 cup shredded American Cheddar cheese
Directions:
            1.)  In a large saucepan, combine all the ingredients except the cheese and mix well.
            2.)  Bring to a boil, then reduce heat to medium-low and simmer for about 6 to 8 minutes or until the corn is tender while stirring occasionally.
            3.)  Add cheese and stir until melted.
