DadsStory: Casseroles For The Kids

I know that the word "casserole" tends to conjure up a lot of bad images of heavy "comfort foods" that aren’t kid friendly, but my kids love these. And, I like them because they are fairly simple to make. 

At any rate, try these out and see for yourself if they aren’t delicious and easy to make.

 

A little history: Few know that the term "Casserole" comes from "Cass" (a reference to Mama Cass) and "roll" (what they would have to do to get her out of the room after feasting upon these easy-to-make, hearty delights.) Of course, my sources could be wrong, but my kids swear by them!

 

 

Pasta Casserole
Ingredients:
            ½ pound ground beef
            1 onion, chopped
            2 cups cooked macaroni
            1 can sweet corn
            4 tablespoons ketchup
            Grated cheese
            1 tablespoon oil
Instructions:
            1.)  Heat the oil in a frying pan and cook the onion until it is soft.
            2.)  Add beef into the pan and cook until it has browned.
            3.)  Add the macaroni, sweet corn, and ketcup and mix together.
            4.)  Put the mixture into a casserole dish and cover the top with your choice of grated cheese.  Bake in a 350 degree oven until the mixture is hot and the cheese has melted.

 

Tater Tot casserole
Ingredients:
            1 ½ pounds ground beef
            1 small onion, diced
            1 can cream of mushroom soup
            1 can cream of chicken soup
            ¼ cup water
            2 cans vegetables (peas, corn, green beans)
            1 small bag Tater Tots
            Salt and pepper
Instructions:
            1.)  Heat oven to 350 degrees.
            2.)  Pat raw ground beef into the bottom of a 9×13-inch pan.  Sprinkle the top with salt and pepper.  Place the diced onion on top.
            3.)  Mix together the soups and water and then pour the mixture over the ground beef and onions.  Drain the canned vegetables and add them to the top.
            4.)  Place the Tater Tots on top and bake for about 1 hour.

 

 

Spaghetti Casserole
Ingredients:
            1 pound spaghetti
            1 jar spaghetti sauce
            1 package hot dogs, sliced into rounds
            American shredded cheese
Instructions:
            1.)  Heat oven to 350 degrees.
            2.)  Cook your spaghetti as the package directs; then rinse and drain the pasta.
            3.)  Butter a casserole dish or pan.  Put in the spaghetti, spreading it out into a layer.  Then add a layer of spaghetti sauce, followed by a layer of hot dog slices, and then another layer of spaghetti sauce.
            4.)  Top all of this off with the shredded cheese and bake for about 30 minutes or until the casserole is bubbly and the cheese has melted.

 

 

Tuna Fish Casserole
Ingredients:
            2 cans tuna
            1 can sweet corn
            1 can cream of mushroom soup
            1 bag of plain potato chips
            Some grated cheese
Instructions:
            1.)  Pre-heat the oven to 350 degrees.
            2.)  Drain and break up the tuna, placing it in the bottom of a casserole dish.
            3.)  Drain the sweet corn and layer it on top of the tuna.
           4.)  Pour the mushroom soup on top
           5.)  Crush up the potato chips and sprinkle them over the casserole.  Then sprinkle the grated cheese over the top.
           6.)  Bake the casserole in the oven until the mixture is warm and the cheese has melted.
