DadsStory: Quick Snacks Without All the Sugar!

By Jared Williams

Whenever my kids come over, I like to have some snacks available for them between meals.  My problem is that I don’t want to give them a lot of sugar or really unhealthy snack mixes.  I try to be very conscious to feed them healthy food that they will also appreciate and eat.

Here are two of our favorites!

Yogurt-Pineapple Popsicles
Ingredients:
            2 cups plain yogurt
½ cup canned crushed pineapple (in its own juices, not syrup)
1 can frozen pineapple juice concentrate, or orange-pineapple juice concentrate, thawed
            Plastic Popsicle mold trays
Directions:
            1.  Drain the can of crushed pineapple, then put all of the ingredients in a medium sized bowl and mix together.
            2.  Spoon the mixture the plastic Popsicle trays, filling each almost to the top.  Cover each mold with the cover given (or plastic wrap if no cover is available).  Make sure that the stick is standing straight up in the center of the cup.
            3.  Put the cups in the freezer until the mixture is frozen solid.
